About Mar Sea Club
Welcome to Mar Sea Club, our Mediterranean oasis located within the gardens of the St. Regis Mardavall Mallorca Resort! Mar Sea Club coexists in perfect harmony with the surroundings and the aesthetics of our resort. Handmade mosaic-topped terracotta tables, noble materials such as limestone, wood, ikat fabrics or esparto grass define the elegant decoration of Mar Sea Club. Open daily for lunch and five days a week for dinner, Mar Sea Club welcomes hotel guests and external guests alike with a fresh gastronomic offer and delicious cocktail creations.
Our Chef Pau Oliver
Pau Oliver discovered his love for cooking with his grandmother Antonia who was an excellent cook and a source of inspiration for him. After two years in tourism, he discovered his affinity for the rhythm and heat in the kitchen, taking him to study cooking at the Escuela de Hostelería de Palma in 2000.
After his studies Pau started working at the two Michelin starred restaurant Tristán where he gained first gourmet experiences for two seasons. After Tristán, his career path took him to restaurant Plat d'Or at the Arabella Golf Hotel before running a Spanish restaurant in Munich for one year. He returned to Mallorca, taking on roles in different establishments, including Executive Chef at the Capuccino group and co-owner of a restaurant with tasting menus. Joining the St. Regis Mardavall team as sous chef in 2012.
Pau's cuisine is based on the simplicity and the quality of the product. With Mediterranean, South American and Japanese influences, his goal is to enhance natural flavors. His passion and focus on quality are reflected in every stage of his culinary career.
